Taco Tuesday!


Tacos are an easy weeknight dinner that I make about once a week. Turkey, chicken, bean and rice, the possibilities are endless! For my turkey tacos you just brown up some ground turkey with cumin, chili powder, and garlic powder and you are done. Ok, well, you have a little chopping to do, but it can all be done in 30 minutes - easy peasy!


Turkey Tacos


The Stuff:
2 sprays of cooking spray
1 package 99% lean ground turkey
1 medium onion, chopped
1 small green bell pepper, chopped (optional)
1 can fire roasted tomatoes
1 small can fire roasted green chilies
1 tablespoon each:
  • cumin
  • chili powder (I actually put close to two tablespoons -we like spice!)
1 teaspoon each:
  • paprika
  • chili flakes
  • salt
  • pepper
1/2 tablespoon of garlic powder
1 1/8 cup reduced fat cheese (I use cheddar)
1/2 cup light sour cream
1 tomato
1/2 head of iceberg
cilantro
5 La Tortilla Factory Whole Wheat Tortillas


The How To:
  • In a large pan add 2 sprays of cooking spray and cook the onion and the green bell pepper for 5 minutes
  • Add turkey and cook until browned, make sure to crumble turkey with back of spoon as it cooks
  • Add canned tomatoes, chilies, and spices (feel free to use taco seasoning if you prefer) and cook about 10 minutes until liquid is absorbed






  • Chop tomatoes, cilantro, lettuce (pretend there is lettuce in this picture - I spaced picking it up at the grocery)




  • Start the assembly: pile a 5th of the meat mixture onto to a warm tortilla, top with 1/8 cup cheese, tomatoes, lettuce, 5th portion of sour cream and some cilantro. These are super filling too, I eat about 1 or 1.5 and I'm full.




Weight Watcher Friends: Turkey filling is 4p+ add your toppings as you like. My tacos are 7p+ with all the fixings
